But here’s someplace you can put ‘em: SOFFRITTO.  Carrots, celery and onion…the holy trinity of Italian cooking!   (Actually, the French will claim they invented it as mirepoix…but you know the French…).  

Maybe you had a chance this summer to see Stanley Tucci eating his way across Italy.  I did, and I’m holding him personally responsible for at least five of my most recent pounds.  Tucci was already one of my favorite actors, but I fell and fell hard watching him slice, dice and sweat the trio in olive oil before adding the pulp of several large San Marzano beauties, plus a little questo e quello, to create a sauce fit for Caesar.  Grab a pot, choose your seasonings and simmer for a sauce so rich and full that you won’t miss the meat.  My delivery system of choice here is penne rigate ridged to deliver every swirl of sauce directly to my mouth.  Paired with a round red vino from Mitchell & Mitchell… Abbundanza! Tip: Make enough to freeze for the winter; taste summer all year long. You’re welcome.

While we’re talking produce, take a stroll past all three of our fruit and vegetable booths. Stop and take it in…and appreciate what it takes to bring it all to you each week.  Farming is more than hard work, it’s an act of faith…Food grows somewhere between mud and miracle.   So thank the next farmer you see.  And the next one after that.

Moving on…I promised to report back on Planted Kitchens Pink Sauce.  Guess what?  It is amazing on a slab of mild Amazing Acres goat cheese.  Find some crackers or crusty bread and enjoy.  And maybe buy two bottles from Mitchell & Mitchell!
